Tomato and Basil Pappardelle Pasta
Tomato and Basil Pappardelle Pasta Ingredients
• 8 ounces pappardelle pasta
• 3 tbsp olive oil
• 10 ounces cherry tomatoes
• 1 tsp dried basil
• 1 tsp dried Italian herb blend
• Pinch of salt and black pepper
• 1 tbsp chopped garlic
• 8 ounce can tomato sauce
• 1/4 cup fresh basil finely chopped
• Parmesan cheese
Boil the pappardelle as per the directions on the pack, save 1 cup of the pasta water before draining and set aside.
To a large pan, heat the olive oil until hot.
Add the tomatoes and cook over a medium heat until they begin to soften, about 5 minutes.
Add the dried basil, Italian herbs, salt and pepper and stir well.
Continue to cook for another 2-3 minutes then add the garlic and tomato sauce.
Stir to combine and let simmer for about 5 minutes.
Add the chopped basil and stir. Taste and season with more salt and pepper if needed.
Add about half of the pasta to the pan, making sure to coat the pasta well.
Pour in about a half cup of the pasta water to loosen the sauce and add more pasta if desired.
Place some pasta with sauce onto a plate and garnish with grated Parmesan.
Serve at once.
