Grilled Tri-Tip with Spicy Barbeque Sauce
Ingredients
2 1/2 pounds tri-tip
1/4 cup Rodney Strong Cuban Spice Rub
1 cup ketchup
1/3 cup brown sugar
1/4 cup apple cider vinegar
2 tbsp soy sauce
1/2 cup plus 2 tbsp Coca Cola
1/2 tsp Tabasco sauce
Directions
Preheat the grill to high.
Generously rub the tri-tip all over with the spice rub.
Let the meat sit for 15 minutes at room temperature.
Make the sauce by combining the ketchup, brown sugar, vinegar, soy sauce, Coca Cola and
Tabasco in a small pot.
Whisk together until smooth.
Bring to a boil and then simmer on low heat for about 15 minutes.
Turn off the heat and let stand.
Place the tri-tip onto the hottest part of your grill n sear for 10 minutes.
Turn the meat over and place onto a cooler part of the grill and cook for a further 10-15
minutes or until the internal temperature reads 135 degrees F for medium rare.
Transfer the tri-tip to a baking sheet pan and cover with foil.
Let the meat rest for 10 minutes.
Slice the tri-tip across the grain into thin slices.
Serve with the spicy bbq sauce on top or on the side.
