1/4 cup cornstarch
1/3 cup sugar
3 tablespoons cocoa powder
1/4 teaspoon salt
3 cups whole milk
4 ounces bittersweet chocolate, chopped
1 teaspoon vanilla extract
Chocolate shavings to garnish
Whisk together cornstarch, 1/3 cup sugar, cocoa powder, and salt in a heavy saucepan, then gradually whisk in milk. Bring to a boil, whisking constantly over medium heat for about 2 minutes (mixture will thicken).
Remove from heat and whisk in chocolate and vanilla until smooth.
Pour into 4 ounce ramekins.
Cover with plastic wrap, pressing against the surface of the pudding to prevent a skin from forming.
Chill for at least 4 hours to overnight to set.
Serve with whipped cream and chocolate shavings
