Black Bean Burger
Black Bean Burger Ingredients
• 1, 14oz can black beans, drained and rinsed
• 1/4 cup diced onion
• 1 adobo chili diced
• 1 tbsp minced garlic
• 1 cup cooked quinoa
• 1 cup frozen corn, thawed
• 1 tsp cumin
• 1/2 cup chopped cilantro
• 1 tsp paprika
• 1 tsp dried oregano
• Pinch of salt and black pepper
• 2 tbsp all purpose flour, plus extra if needed
• 1/4 cup olive oil
• 4 Soft brioche buns
• Lettuce
• Tomato, sliced
• Onion, sliced
• 1/2 cup mayonnaise (optional)
Directions
In a bowl combine the beans and roughly mash with a fork
Add the onion, chili, garlic, quinoa, corn, cumin, cilantro, paprika, oregano, salt, pepper and
flour.
Gently mix the ingredients together, if the mix is sticky add a sprinkle of flour.
Divide the mixture into 3oz pieces and form into patties about the size of your palm. Flatten
and set aside.
Once all the mixture has been used, heat the oil over a medium heat and add the burgers
without overcrowding the pan.
Cook slowly for about 4 minutes before turning them over to continue cooking for about
another 3-4 minutes and Bothe side are golden brown.
Spread each bun with mayo, top with a burger and finish with lettuce, tomato and onion.
