Roasted Red Pepper and Mozzarella Sandwich
Roasted Red Pepper and Mozzarella Sandwich
Ingredients:
- 1 Ciabatta baguette, about 6-8 inches long
- 1 red pepper
- 1 ball fresh mozzarella
- Salt and black pepper
- 3/4 cup of fresh pesto
- 6 oz baby arugula
Directions
Slice the ciabatta in half, length ways creating two pieces.
Place a gas burner on your stove to high and roast the pepper directly over the flame. You can
also do this on a bbq.
Roast the pepper turning often to make sure every side is completely charred.
Place the blackened pepper into a zip lock bag and seal.
Let the pepper rest for about 5-10 minutes before peeling all of the blackened skin from the
pepper.
Slice the pepper into four strips, discarding any seeds you find.
Spread both sides of the ciabatta generously with the pesto.
On the bottom side of the bread lay the roasted pepper on top of the pesto.
Slice the mozzarella ball into slices and layer it on top of the pepper.
Season with salt and pepper.
Top with lots of arugula and place the bread on top.
Carefully slice the ciabatta into four even pieces and serve immediately.
