Watermelon & Heirloom Tomato Salad with Mint Vinaigrette

Pair with Rodney Strong Vineyards Rosé of Pinot Noir



1 small watermelon
4 Herloom tomatoes
12 cherry tomatoes
Mint leaves
Baby arugula
½ cup Mint Vinaigrette
½ cup Goat cheese

Mint Vinaigrette:

¼ cup lemon juice
¼ cup fresh mint leaves
¼ cup red wine vinegar
½ tsp sea salt
1 cup EVOO
1 tsp. honey


Combine lemon juice and mint, then bring to a boil and remove from the heat

Let steep for 10 minutes

Strain into a mixing bowl and add the remaining ingredients and whisk together

Toss the watermelon and tomatoes in a bowl and add some of the vinaigrette

Season with sea salt and garnish with goat cheese, arugula and mint leaves

Servers four.
