Two Sonoma County, California chefs come together to showcase the two sides of the region’s cuisine: down home (comfort food with Southern flair) and downtown (upscale with French influence).
After preparing a dinner for Rodney Strong Vineyards, at which Jeff Mall of Zin Restaurant & Wine Bar in Healdsburg, CA, and Josh Silvers of Syrah Bistro in Santa Rosa, CA, applied their contrasting styles to the same Sonoma ingredients, Down Home : Downtown was born. In this cookbook, Jeff’s recipe for Duck Breast “Pepper Steak” with Brandy and Green Peppercorns, Crispy Stone-Ground Grits, and Braised Greens with Apples and Bacon is presented alongside Josh’s Pan-Roasted Liberty Duck with Blackberry Gastrique, Slow-Cooked Greens, and Mascarpone-Enriched Polenta: the same duck, served different ways.
